For added stability, can I use 6x6 vertical posts rather than 4x4s?

If so, how are the 6x6s attached to the Dek Blocks?

We do not have a plan that shows how to attach 6x6 posts to the blocks. If you follow our plans you should not need to use 6x6 posts.
